Veronica

Commonly known as speedwell, bird’s eye, or gypsyweed, it is valued for its ease of growth and long bloom time. Some species of Veronica are edible and nutritious, with a watercress-like flavor.
The Veronica is a beloved, old-fashioned flower from the Veronica spicata (spiked speedwell) plant. The plant grows up to 3 feet tall and produces long flower spikes in a variety of colors. A few common Veronica varieties include blue ('Royal Candles'), red ('Red Fox') and white ('Noah Williams').
